Carnivore Toad in a Hole
Serves 4
3 lb ground beef or pork
Sea salt, to taste
Ground clove and ground sage, to taste (optional)
¼ cup tallow or butter
12 small eggs or quail eggs
Add meat, salt, and optional dry seasonings to a medium bowl. Mix gently until combined.
Form mixture into 12 patties on a cutting board. Press your thumb into the center of each patty and create a deep cavity large enough to fit a cracked egg.
Add tallow or butter to a large skillet over medium heat. When hot, add 3 to 4 patties at a time, cavity-side up.
Cook for 3 to 4 minutes or until patties are browned.
Crack 1 egg into each of the cavities of the patties in the skillet. Cook for 3 more minutes or until meat is nearly cooked through.
Flip each patty, then cook for 2 minutes or until eggs are cooked to your liking.
Transfer cooked patties to a plate, then repeat the cooking process with remaining meat and eggs. Enjoy!

Also delicious made with wild game or poultry instead of beef or pork.
